When do potatoes go bad?

Random question, I know, but I've never been a good cook, and I bought some small red potatoes a couple weeks ago, and now they are sprouting, and getting soft in some spots. Are they still good? Can I just cut the sprouts off?

Damn I'm boiling some right now, I tried to stay away from the ones with a lot of spouts.
My problem is I buy stuff that I don't use for awhile, so some of it ends up going bad, I need to learn to buy stuff and use it right away

get an indoor planter and grow some more

but yes, sprouting is essentially a potato going to seed. if they are soft and mushy, even if they don't have sprouts, i'd still toss them.

make sure you store them in a natural fiber bag (no plastic!) you know, a potato sack somewhere dry and dark, and they will last for quite a while.

I grew up on a farm where we grew our own potatoes, and we kept them in cold storage over the winter....we still ate them when they started getting eyes (well, we snapped them off, obviously...) I'm not dead yet, so it can't be that bad

I agree with kate425, potatoes are bad when they start getting a bit softer than normal...or if the eyes are REALLY bad!

I think they are also considered "bad" if the skin turns green.....?

I do find that my white potatoes keep MUCH longer if I keep them in the garage.
The yams/sweet potatoes actually seemed to keep better in the house; in the garage they molded very quickly.

Garlic sprouts too...which is really strange (imo)
but yeah...i guess if potatos are like garlic then i suppose they wouldnt go bad with sprouts (i used some sprouted garlic in a dish i made)...though the sprouts scared me to death at first...

People eat garlic sprouts (at least Chinese people do), so I assumed any stage between garlic and garlic plant was ok and edible

yeah, garlic sprouts are good
i usually test the firmness of the potato. if its firm and growing little roots, ill still use them

I purchased a bag of potatoes last week, there was a rotten one in the lot - it was so fowl, until you smell one it can not be described. I smell every potato now before preparing! The sprouts have never bothered me though.

Pop off the sprouts and cook them anyway.
Have done so for years also.
There is nothing wrong with the potato.

TRUE ~do NOT eat GREEN ones.
DO NOT eat the sprouts!

I've used sprouted potatoes before too, I just cut the sprouts off ... I'm fine and I have a very weak stomach. I have never had mushy ones though. My fridge has a dark drawer in the bottom where I keep the potatoes, they seem to last forever in there.

If you still want to use a sprouting potato, cut the sprouts off (not break them) to make sure you're getting rid the toxic parts. don't eat them if they are soft or green. Illness is rare, but possible.

^^ Yep, yep. Sprouting potatoes contain toxic alkaloids. That's why you aren't supposed to eat those ones
I have cut the sprouts off before in a rush & I didn't get sick though

Me too. I hate to waste anything. I draw the line at slimy though. If it's slimy, it goes in the trash.

nice necropost...I was actually just thinking I might try those little red potatoes. BF made me this super elaborate birthday dinner and with the steak we had the red potatoes coated in something involving olive oil...yum and i need to branch out from sweet potatoes (so much healthier than regular white, though)

wtf are people so concerned about when potatoes go bad? If you think they are bad buy another bag! I just picked up a bag of mini potatoes for $3. They are even multicolored. Brown, red and purple! You cannot beat that with a stick!
