| | | When do potatoes go bad? Random question, I know, but I've never been a good cook, and I bought some small red potatoes a couple weeks ago, and now they are sprouting, and getting soft in some spots. Are they still good? Can I just cut the sprouts off?

| | Damn  I'm boiling some right now, I tried to stay away from the ones with a lot of spouts.
My problem is I buy stuff that I don't use for awhile, so some of it ends up going bad, I need to learn to buy stuff and use it right away

but yes, sprouting is essentially a potato going to seed. if they are soft and mushy, even if they don't have sprouts, i'd still toss them.
make sure you store them in a natural fiber bag (no plastic!) you know, a potato sack  somewhere dry and dark, and they will last for quite a while. |

| | I grew up on a farm where we grew our own potatoes, and we kept them in cold storage over the winter....we still ate them when they started getting eyes (well, we snapped them off, obviously...) I'm not dead yet, so it can't be that bad
I agree with kate425, potatoes are bad when they start getting a bit softer than normal...or if the eyes are REALLY bad!

I do find that my white potatoes keep MUCH longer if I keep them in the garage.
The yams/sweet potatoes actually seemed to keep better in the house; in the garage they molded very quickly. |

but yeah...i guess if potatos are like garlic then i suppose they wouldnt go bad with sprouts (i used some sprouted garlic in a dish i made)...though the sprouts scared me to death at first...

i usually test the firmness of the potato. if its firm and growing little roots, ill still use them  |
