| | | Vegetarians & Vegans...post your favorite on-the-go meals & snacks here! I am in a total rut with my meals & snacks...I eat all of my meals except dinner at work, so I need some new, very quick & portable ideas for lunches & snacks, and would love new dinner ideas.
My staples:
Breakfast- Kashi GoLean & soymilk
Lunch: Either hummus & veggies on whole grain bread with baby carrots & fruit on the side, or edamame, fruit, and almonds
snacks: fruit, almonds
Help me mix it up! I need things that are easy to carry around and don't take too much time to prepare. I am getting so bored of what I eat!  |

| | Any kind of salad that involves chickpeas or some kind of beans. Or potatoes. Or any kind of vegetables tossed in some olive oil and herbs. You can put it in a box and eat it straight out of the box at work.  Wonderful recipes on Vegan / Vegetarian Recipes and More for the Vegan Diet and Lifestyle. Also awesome: all kind of wraps.

| | | I didn't completely, but I try to eat that way 90% of the time. And dairy doesn't agree with my belly (I'm lactose intolerant) so I've been trying to cut it out despite my enduring love of cheese. D. is much happier when i'm not eating dairy! ;) |

Whole wheat pasta salad that is 50% veggies, 20% beans, 30% pasta would be tasty.
I eat a lot of all bran bars. Not vegan but yummy.
You can also change the flavour of the hummus, or try baba ghanoush. Falafels are yummy too.

I Just buy a bunch of veggies chop them up throw them in a pan with a bit of olive oil and seasoning.Then slowly add water and add some curry powder simmer and serve over white or brown rice-MMM 
Its quicka and easy. |

| | I put everything in a casserole in the oven (vegetables, olive oil, garlic, herbs). Or on a sheet. I love baked veggies! I even let them cool down in summer, and mix it with a honey/mustard sauce as a salad.

| | | My favorite cookbook is called Vegan with a Vengeance by Isa Chandra Moskowitz (sp?) and there are some great recipes in there you might want to check out. She has a website, too- just search her name, and she has a show called "Post Punk Kitchen".
Otherwise- my favorite lunches/dinners/snacks are:
Nori Rolls: I make a whole batch of these to last a week and keep them in the fridge. I take a sheet of seaweed and make brown rice with a tablespoon or so of rice wine vinegar. i then cover 2/3 of the seaweed with the brown rice and slice veggies (favorites are carrots, zucchini, spinach, sometimes some canned tuna fish, avocado, lemon juice, hot sauce, whatever you want, really!), roll it all up and wrap it in celephane to keep in the fridge at work.
Amy's lowfat canned soup- the best ones are french onion soup, lentil, minestrone...etc. I usually have half a can, and then it's like $1.50 for TWO lunches. You can just throw a bowl of it in the microwave.
Greek Couscous: basically make a pot of couscous and add sliced apples, sauteed shallots and mint, spices, and a little bit of feta cheese.

| | | kidney beans (or any beans really) mixed with chopped cucumber, tomato, corn, red onion, green and red bell peppers, any veggies really. Topped with olive oil and vinegar and some herbs. I prefer a good fat free italian dressing but hubby doesn't.
I eat it plain or throw it in a wrap. I even top a bed of lettuce with it. |

| | | Trader Joe's masala sauce simmer sauce with cauliflower, potatoes, carrots and tofu over brown jasmine rice. I also love tabouleh with hummus and wheat pita bread. Also, have you tried the seasoned, pressed tofu? It's brown and more dense than regular tofu and it usually seasoned with flavors like terriyaki. It's very tasty and a good alternative to bland regular tofu. |

| | | one of my fave on the go, quick meals is microwaved baked potatoes. takes like 5 mins, you can top with a variety of things, and its really filling. its already been mentioned but i love hummus, but only the chipotle pepper one.... so tasty!

-try a fake-bacon blt, they are awesome
-tacos with fake meat, quick and yummy!
-go smart has lots of fake lunch meats, which make great sandwiches. they are somewhat high in sodium though, so don't eat like 10 a week
-smart dogs are yum!
-for a dinner, i love baked portabella mushrooms with basil/tomato/mozzarella cheese. i usually make couscous to go with it.
-try different veggies with your dinners, sometimes that is enough to change things up.
-yogurt! i cannot live without my afternoon yogurt and fruit. i prefer the more sour greek style yogurt, it's great with honey.
-alissa mentioned amy's kitchen- they also have excellent frozen meals for lunch or dinner, and make vegan/gluten free options as well. my fav is the soy cheese and rice macaroni!
-pirogies. if you make your own, you can put whatever you want in them! |

| | I absolutely love snacking on egg and avocado (not together!) maki rolls. I love meat, so I will never eat just a leafy salad in place of a meal. So if I were to skip meat for a meal I will still need "real food".
I guess I love potato salads too  Especially devilled egg & potato salad... damn I'm hungry.
I like some vegetarian meat but not those Yves ones...

Ingredients:
2 tsp olive oil
1 onion finely chopped
1-2 garlic cloves
2 celery ribs
14 oz can red kidney beans (or soak your own)
14 oz can lentils (or soak your own)
1 egg
1 carrot, coarsely grated
1⁄2 cup aged cheddar cheese or soy/goat/sheep cheese
1 cup fresh bread crumbs (make your own from bread of kamut, spelt, rye, oat, etc.)
2 tbsp tomato paste, tomato sauce or salsa
1 tsp each ground cumin, coriander & hot chili powder (or your choice)
salt & pepper
Oven 350 degrees * 9 x 5 x 3 loaf pan * cook about one hour.Sauté veggies about 5 minutes & remove from pan. Rinse & drain beans & lentils. Place in blender with veggies. Transfer all to a bowl & add remaining ingredients. Spoon mixture into prepared (oiled) pan and bake.
Enjoy with a green salad and steamed vegetables. Even delicious at room temperature. Always a hit at vegetarian pot-lucks. Make a large enough batch to carry you through several lunches at work.
This recipe was handed down to me by my yogini friend Sharon (Seva Simran Kaur).

| | | I've been making a lot of coconut curries lately. They're delicious and simple. Simmer whatever veggies in coconut milk, add bragg's or soy sauce, and some red curry paste. Boil some rice noodles (the wider ones hold up better) and mix it all up. It's a good leftover too.
The raw bars that are out now, like Lara Bars, are a pretty good snack, and vegan. |

I sauteed butternut squash, sliced asparagus, and shitake mushrooms in a little bit of olive oil a sauce made out of Annie's vegetarian worchester (sp?) sauce and brown sugar, and put it all on top of a mix of brown rice and wild rice. SO yum.
