Official Low Calorie recipe thread

Post up your low calorie recipes here. If posssible, please post approximate calories per serving and a photo of the recipe.

So it can be a little easier to search through the replies, please post the recipe name in the title reply box. That way it bolds it at the top of the post and stands out a little easier. (Does that make sense?)

Strawberry Vinaigrette Recipe

I will start off with one of my favorites. I make a big batch of this each week and store it in a salad dressing bottle I purchased.

This dressing recipe has only 10 calories!!!! I have yet to find a store bought kind that has less then 60 per serving. And this tastes delicious! I used it on my salads and also as a 'dip' for my celery sticks (I would love to smoother those things in peanut butter but holy moley that is a lot of calories. So this is an excellent way of bringing some flavor to them)

This receipe is for one serving. I typically multiple it by 4 and make a bunch.

Calories per serving: 10

Ingredients:
2 Strawberries
1 tablespoon apple cide vinegar
1 tablespoon fresh lemon juice
Stevia to taste
Dash of Salt
Dash of Cayenne (optional)
Fresh black pepper, to taste

You can either combine all these ingredients in a food processor and puree until smooth if want a super liquidy dressing. Or you can finely chop the strawberries and then just mix everything together in a small bowl. I typically use one of those hand food chopper things (like this)

Note, if you want to use cayenne for a little kick add only a TINY bit.

Chobani Ranch Dip



This makes an excellent dip to bring to parties or to dip veggies or chips in it. When I make it for parties I usually make 8 oz at a time.

What you need:

1 packet of Hidden Valley Ranch dip mix
8 oz of non-fat plain greek Chobani yogurt (I prefer Chobani, but you can use whatever you like)

Mix ranch packet into Chobani and refrigerate for 30 minutes. Serve.

All nutrition information is based on 8 oz:

Calories: 145
Fat: 0g
Protein: 23g
Carbs: 9g

Portobello Parmesan


Recipe and photo: One Perfect Bite blog

Ingredients:
1/2 cup Italian-style bread crumbs
1 cup (3-oz.) freshly grated Parmesan cheese, divided use
1 teaspoon sweet paprika
1/4 cup fresh minced parsley, divided use
2 teaspoons kosher salt, divided use
3/4 cup egg substitute
1/2 teaspoon fresh ground black pepper
1 teaspoon marjoram
1 teaspoon garlic powder
1 teaspoon oregano leaves
4 large (5 to 6-inches wide) stemmed portobello mushrooms, brushed clean
1-1/2 cups (6-oz.) shredded part-skim mozzarella cheese
1 cup commercially prepared "light" tomato sauce
Cooking spray

Directions:
1) Position a baking rack in upper third of oven. Preheat oven to 400 degrees F. Line a 17-1/2 x 11-3/4 baking sheet with aluminum foil. Place a 16-1/2 x 11-1/2-inch wire cooling rack inside the baking sheet. Mist rack with cooking spray. Set aside.
2) Combine bread crumbs, 1/2 cup Parmesan cheese, 3 tablespoons parsley, paprika and 1 teaspoon salt in a shallow pan. Mix well. Set aside.
3) In a separate bowl, combine egg substitute, remaining 1 teaspoon salt. pepper, marjoram, garlic powder and oregano. Mix well.
4) Dip both sides of mushrooms into egg mixture. Dredge in crumb mixture until both sides are completely coated. Transfer, stem side down, to prepared wire rack. Spray tops with cooking spray and bake for 15 to 20 minutes, or until mushrooms are tender. Remove pan form oven.
5) Reset oven thermostat to 450 degrees F. Meanwhile, carefully turn mushrooms stem side up. Cover each mushroom with 2 tablespoons of remaining Parmesan cheese, 1/4 of Parmesan cheese and 1/4 cup tomato sauce. Spray tops lightly. Return to oven and bake until cheese melts and mushrooms are warmed through, about 10 minutes. Use a wide spatula to transfer mushrooms to a serving platter. Sprinkle with reserved 1 tablespoon parsley. Yield: 4 servings.

Note: I usually nix the parmesan and use 2 oz more of fat-free mozzarella and instead of using light tomato sauce I use the roasted garlic Safeway brand spaghetti sauce. Nutrition information with these adjustments are as followed. These are really filling and paired with a big salad, it makes the perfect low-cal dinner.

Calories: 122 calories
Fat: 1g
Protein: 15 g

Chipotle Chicken Chili

What you need:

2 halved and sliced medium onions
1 can (14.5 oz) diced tomatoes
1 tbs tomato paste
3 garlic cloves chopped
2 cups of low sodium chicken broth
1 chipotle in adobo seeded and chopped, plus 1 tbs of adobo sauce
1 tsp of ground coriander
1 tsp salt
2 lbs of in bone chicken thighs, skin removed
1 can (15.5 oz) black beans, drained and rinsed
1 cup of frozen corn kernels, thawed

Serves 8

Combine onions, tomatoes, tomato paste, garlic, broth, chipotle and adobo, coriander, salt and pepper, in the base of the slow cooker; wedge chicken thighs into the mixture submerging at least half of the meat into the liquid. Cover and cook on high for 6 hours or low for 8 hours.
Remove chicken bones and shred meat back into slow cooker. Stir in beans and corn to heat through

Nutrition information per serving:
Calories: 229
Fat: 5g
Protein: 27g
Carbs: 17g

I'll have to come back and make an actual recipe a bit later but I love to use shredded spaghetti squash in a few dishes and can't wait until summer so I can get fresh squash from my garden.

made some of this today and it was yummy! some may think this is gross, but I dipped some fresh strawberries in it and it was sooo good!

Sounding good i guess taking this sort of food can really be a helpful thing especially when it comes to losing weight or maintaining it,Because it is a real bother for some people who really wanna get rid of it.So yeah that can be done mate.
