| | | I make this super easy dish called cola chicken:
4 chicken breasts
1 can of diet cola
1 cup of ketchup
mix the cola and ketchup together then add to the chicken in a skillet. Let it bubble a litle then turn down the heat to low and let it simmer. The chicken will come out very tender and soft and you'll have a barbecue sauce like topping for the chicken when its done.
Pair this with some vegetables.
I make this about 3 times a week because its so easy.
Its not healthy to the extreme but its low points on my weight watchers diet and is very tasty |

| | I just made one of my favorite easy recipes- toss frozen or thawed chicken breasts in the crockpot, pour a can of green chile enchilada sauce (very low-cal) on top, season with garlic spice and chile powder, and let cook for 4-6 hours.
High protein, low-carb, and low cal. And yummy! It's also good with cheese sprinkled on top  |

| | | This is my new favorite dish! It's soo fast & easy, but you have to like the flavors to appreciate it:
~ Fresh Tilapia fillets, slightly layered flat on baking/casserole pan, seasoned to taste with salt, ground black pepper, ground red pepper
~ Lightly saute with olive oil slices of red onion, diced green bell pepper, chopped roma tomatoes, minced garlic, until everything is halfway cooked. Mixture should be a bit liquidy from the tomatoes.
~ Mix a splash of white vinegar and squeezed lemon juice to the vegetables and pour everything over the fish in the pan.
~ Cover tightly with aluminum foil and place in oven 350-375 degrees until fish is opaque and flakes easily. In my gas oven, it's about 35 minutes.
I eat this with white steamed rice, but brown rice is healthier. I'm addicted to this dish! |
