need a new chicken recipe/marinade.............

low fat/sodium. anyone have any recomendations?

i like chicken marinated in italian dressing if you marinate potatoes in it, it's even better.

Epicurious.com: the World's Greatest Recipe Collection! I love it! There should be an option to look for low fat/sodium, although the low sodium is something you can make sure for yourself.

got these out of musclemag:

Red Wine Marinade
1/2 cup cry red wine
1/4 cup red wine vinegar
2 garlic cloves, minced
1 Tbsp. dijon-style mustard
(1/4 cup serving...23 calories, 0g protein, 1g carbs, 0g fat)

Hot n' Tangy
1/4 cup cider vinegar
1/4 cup ketchup
1/4 cup fresh lemon juice
2 tbsp. non-hydrogenated margarine, melted
2 tbsp prepared horseradish
1tsp worcestershire sauce
few drops of hot sauce
combine ingredients in a small pan and bring to a boil. lower heat, cover and simmer for 10 minutes. pour over chicken and turn to coat
(1/4 cup serving..29 calories, 0g protein, 8g carbs, 1g fat)

Spicy Dry Rub
1/2 Tbsp. paprika
1/2 tsp. brown sugar
1/2 tsp. coarse salt
1/2 ground pepper
1/4 tsp. dried thyme
1/4 tsp. cayenne pepper
stir together ingredients in a small bowl. Rub into chicken before cooking

This last one sounds complicated:

Tandori Marinade
3/4 cup plain fat-free yogurt
3/4 Tbsp. ground coriander
3/4 Tbsp. paprika
1/2 Tbsp ground cumin
1/2 Tbsp. ground ginger
1 tsp. garlic powder
1 tsp. ground black pepper
1/2 tsp. ground cinnamon
1/2 tsp. ground cardamom
1/4 tsp. ground cloves
juice of 1/2 lemon
Mix all ingredients in a bowl. Pour over chicken and turn to coat. Set aside extra marinade to top cooked chicken.
(1/4 cup serving...41 calories, 2g protein, 8g carbs, 1g fat)

Orange Rosemary Chicken

4 chicken breasts
Freshly ground pepper to taste
1 1/2 teaspoons chopped fresh rosemary, divided
3 tablespoons orange marmalade
2 tablespoons sherry vinegar, malt vinegar or cider vinegar
1 teaspoon extra-virgin olive oil

1. Preheat oven to 400°F. Coat a roasting pan with cooking spray.
2. Season chicken on both sides with salt and pepper and place in the prepared pan. Sprinkle with 1 teaspoon rosemary.
3. Bake the chicken for 20 minutes. Meanwhile, combine the remaining 1/2 teaspoon rosemary, marmalade, vinegar and oil in a small bowl.
4. Turn the chicken pieces over and top with the marmalade mixture. Bake until the chicken is no longer pink in the center, 15 to 20 minutes more. Serve immediately, spooning the sauce over the chicken.

Per serving: 252 calories; 3 g fat (1 g sat, 1 g mono); 107 mg cholesterol; 10 g carbohydrate; 43 g protein; 0 g fiber; 74 mg sodium.

Most current favorite:

Kraft Raspberry Vinegarette to marinate and then pan-fry or grill... it's different and refreshing! And it tastes good too!

Here's my favorite marinade for the grill:

For at least 20 minutes, marinate the chicken in:

1/2 soy sauce
1/3 cup honey
1/4 cup lime juice (about a whole lime's worth)

It's YuMmY and very juicy!!!

drooling....

My marinade for barbeque chicken wings is pretty similar to the above... honey, red wine, soysauce and lots of finely minced garlic and coarse ground black pepper

My favorite way to make chicken is to pan-fry it in a little olive oil with some lemon pepper seasoning. No marinade required.

I signed up at campbells.com for their recipe emails. They also have a HUGE free database of recipes. I make stuff from there all the time and my boyfriend LOVES about 95% of the stuff I make from there. You can narrow your searches by food, healthy cooking, type of meal etc. so that's really helpful too.
